Zucchini Kofta – a recipe that will undoubtedly be a crowd-pleaser

A couple of weeks ago, I shared the Zucchini Cupcake recipe with you. I was happy to see the response. I mentioned Zucchini Kofta. This time when I made it, I made sure to click some pictures and share this fantastic recipe with you. If you can find Zucchini in your grocery store, then don’t miss trying this out. I guarantee you; it will be a hit. Now, festival season is also approaching, and we will have friends over. Bored of making the same old paneer sabzi for your guests? Don’t hesitate to serve this Zucchini Kofta. I have made it on several occasions, and each of one my guests loved it. It includes kids as well. Yes. And after going home, their moms called me asking for the recipe as their kids requested. So let’s get started.

Zucchini Kofta - a recipe that will undoubtedly  be a crowd-pleaser

For making Zucchini Kofta, you will need:

  1. Zucchini – 3
  2. Potato – 1 medium size – boiled and mashed
  3. Besan (gram flour/chickpea flour) – 2 to 3 spoons
  4. Turmeric powder- 1/4th teaspoon (optional)
  5. Red Chili powder-1/4th teaspoon
  6. Ajwain (carom seeds) – 1/4th teaspoon
  7. Garlic – 1/4th teaspoon
  8. Salt – to taste

Ingredients used for the gravy:

  1. Cashew
  2. Milk – to make cashew paste
  3. Kasoori Methi- 1/2 teaspoon
Zucchini Kofta

Method:

Kofta balls:

  1. Remove the top and bottom parts of the Zucchini. Grate it. Now squeeze out all the excess water from the grated Zucchini.
  2. Add all the ingredients. Mix well.
  3. Take a small portion and deep fry the balls. Then, take them out on a paper towel.

Gravy masala:

  1. Tomato
  2. Onion
  3. Garlic
  4. Ginger
  5. Corriander powder
  6. Turmeric powder
  7. Red Chili powder
  8. Salt
  1. Grind it well.
  2. Heat some oil in a pan or a wok.
  3. Roast the masala until it starts leaving oil.

Note: You can store this masala in the refrigerator and use it as and when needed.

Prepare the gravy:

  1. In a pan, take a few spoonfuls of the prepared masala. Ass some water and mix it well. Bring it to a boil. Check the consistency. Add salt if required.
  2. Turn of the gas.
  3. Grind cashews with little milk and add them to the gravy.
  4. Crush some kasoori methi in between your palms and add that to the prepared gravy.
  5. Drop the kofta into the gravy. Let the balls soak some of the gravy.
  6. Garnish with cilantro and fresh cream. (optional)

Note: Potato is optional, but Zucchini releases more water even after squeezing out the excess water. And adding too much besan will affect the taste of the koftas. Adding potato help the balls to hold the shape, and it becomes easy to fry them for us.

  1. I’ve always wondered what to do with zucchini and usually end up stir-frying it with onions. I’ve seen my mother make fritters out of zucchini flowers. I will make sure to give this a try too when I prepare it next time.

  2. This seems to be a fab recipe. We do make Bottle Gourd (Loki)Kofta and love it. Have not tried Zucchini, but your recipe that combines Zucchini and potato sounds really interesting. Will surely try it out.
