Chocolate Zucchini Cupcakes Recipe : Zucchini in a yummy form

Zucchini is the secret ingredient in these moist chocolate zucchini cupcakes. These days I am in love with Zucchini. So far, I have only seen it in pasta recipes or the form of grilled vegetables. But recently, I tried a few recipes with Zucchini, and everyone loved it. So I am sharing one of those today and will be sharing others in future posts. 

Chocolate Zucchini Cupcakes

I tasted Zucchini Brownie at one of the restaurants here, and ever since, I wanted to try it in my kitchen. Luckily my kids loved it. For parents, it is good news when their kids start liking some of the non-likable vegetables. And when we serve them in the form of a treat, they are halfway convinced to give it a try.  To make it a special treat, have it with ice cream.  I like to warm it up a bit. It tastes better this way.

Chocolate Zucchini Cupcakes are so delicious you will not even believe you’re eating a dessert loaded with Zucchini. These cupcakes are moist and full of flavor. I used oil and no extra liquid. The Zucchini will release their liquid during baking, and this combined with oil is plenty to keep the cupcakes moist. 

So, without further delay, let’s make Chocolate Zucchini Cupcakes.

Ingredients:

  1. Zucchini – 2 cups (shredded)
  2. All-purpose flour – 2 cups
  3. Eggs – 3
  4. Vegetable Oil – 3/4th cup
  5. Vanilla essence – 2 teaspoons
  6. Sugar – 2 cups
  7. Unsweetened Cocoa powder – 2/3rd cup
  8. Baking powder – ½ teaspoon 
  9. Baking soda – 1 teaspoon
  10. Salt – 1 teaspoon

Method:

  1. Preheat the oven to 325F. Line 24 muffin cups with liners. Set aside.
  2. In a large bowl, mix Zucchini, eggs, sugar, oil, and vanilla. 
  3. Add flour, cocoa powder, baking soda, baking powder. Mix well to incorporate.
  4. Take a spoonful of batter and fill the prepared cups. Fill it in about half full. 
  5. Bake for 25 minutes or until an inserted toothpick comes out clean. 
  6. Cool cupcakes completely on wire racks. 
  7. You can freeze these cupcakes and enjoy them later. 
Chocolate Zucchini Cupcakes

Serving suggestions:

Serve it with ice cream and chocolate sauce.

You can also decorate it with frosting.

  4. First of all, I must admit that my knowledge i vegetables and how it can be cooked is very limited. As much as I want to incorporate various healthy options to our daily dishes, I think our taste buds isn’t just used to it. Unfortunately, zucchini doesn’t make it to my list therefore this recipe makes it really intriguing to the point where I’m ready to explore and perhaps be able to fool myself and my family to thinking we’re just eating chocolate cake and nothing fancy and healthy.haha
