Vegetables Oats Upma – healthy way to start your day!!

After a very long time, I am posting any recipe. Today, its something healthy and tasty. Breakfast being the first meal of the day, we want to eat healthy. Many people, like me, prefer light breakfast but over the weekend when our routine is a bit relaxed, the lunch time gets late or sometimes we prefer doing brunch. There are many options that you can make but if you are looking for something warm and tasty then try this Vegetables Oats Upma. First time when I made this, it was during winters so obviously, it was perfect for the weather. Warm, steaming Upma with a cup of tea or coffee. Awesome!! My family liked it a lot so now it has added in my list for brunch options or sometimes lunch or light dinner options as well. You can add veggies of your choice.

So, here it is Vegetables Oats Upma- healthy way to start your day!!

For this you will need:

  • ½ cup Oats
  • 2½ cups Water
  • 2 tbsp. Green Peas 1
  • Carrot, finely chopped
  • 1 tsp. Mustard seeds
  • 1 tbsp. Urad Dal (White Lentil) (available at Indian stores)
  • Curry leaves
  • 1 Green Chilli, roughly chopped
  • ½ tsp. Asafoetida
  • 1 tbsp. Cashews, cut them in small pieces or use it as it it. I cut them.
  • 1 Onion, finely chopped
  • ½ cup Semolina or shoji (available at Indian stores)
  • 2 tbsp. Beaten curd
  • Salt, to taste
  • Lemon juice
  • Sugar (optional)
  • Cilantro leaves

 

Method:-

  •  Roast the oats until the colour changes and transfer to a plate and let it cool down to room temperature.
  •  Heat a pan and heat ghee in it.
  • Add mustard seeds, white lentils, curry leaves, green chilli, asafoetida, cashews, onion and saute until onion softens.
  • Now add semolina and roast for a few minutes.
  • Add the roasted oats, water with vegetables and keep stirring.
  • Once thick enough add beaten curd, salt, lemon juice, sugar, and cilantro leaves.
  • Vegetables Oats Upma is ready!!
