Do you like tutti-frutti? Do you save a spoon or two for yourself when you have to use tutti-frutti for any recipe? Do you try to take out those small mini pieces of tutti-frutti with a fork and like to enjoy them after you finish your cake piece?  I do 🙂 . If your answer is also ‘Yes’ then today’s cake recipe is for you- Tutti Frutti Cake-Alcohol free. I made this for one of my friend’s surprise birthday party. And BTW we were able to maintain the surprise. Yes, we did it.

Since, we had to wait for the birthday girl to cut the cake,  I could take the pictures before cake cutting but couldn’t take any picture of the big slice.  I got this recipe from one of my friends. She made it for Christmas and shared the pictures. She said you can also call it ‘Kerala style Christmas Cake (alcohol-free version)’. For the color, we used Caramelized Sugar SyrupWe have also used cloves, cinnamon, cardamom and mixed nuts. So, you can imagine why it was hard for me to wait for the cake cutting.:). Tutti Frutti Cake – Alcohol free

 

Christmas Cake-2

You will need:

  • All purpose flour – 4 Cups
  • Baking powder – 4 teaspoons
  • Baking Soda – 1 teaspoon
  • Sugar – 2 cups
  • Eggs – 2
  • Melted Butter – 1 cup
  • Cloves – 3 (powder it)
  • Cardamom – 3 (powder it)
  • Cinnamon powder – 2 teaspoon
  • Mixed nuts – 1 cup (chopped)
  • Tutti-frutti – ½ cup
  • Vanilla essence – 1 teaspoon
  • Milk – if needed
  • For Caramelized Sugar – 6 teaspoons sugar in 3 teaspoon water (see notes)

 

Let’s start:

  • Heat a pan with 6 teaspoons of sugar on a low heat. Initially, it melts and turns to a light brown liquid. Keep an eye; you will see the color will starts changing to dark brown. Now add 3 teaspoons of warm water to this. Turn off the heat. Make sure there are no crystals in it. Set aside to cool down completely.
  • Pre-heat the oven on 350 F. Grease the baking pan with butter and then sprinkle 1 or 2 teaspoons of flour, pick the tray and tilt it allowing the flour to cover the entire interior of the tray. Set it aside.
  • Sieve the flour, baking powder and baking soda. Set it aside.
  • Add 2 tablespoons of flour to Mix nuts & tutti frutti and mix thoroughly to coat them well. Set aside. This will help to prevent them from falling off at the bottom of the batter.
  • Beat sugar and butter till it is light and fluffy. And eggs again beat. Add the flour mixture and fold. Add the sugar syrup, nuts & tutti frutti and gently fold in. Add milk if the batter gets very thick.
  • Pour the batter into the prepared try. Bake the cake in the preheated oven for 50 minutes or till tooth pick inserted comes out clean.
  • Cake is done. Enjoy it as it is or dust it with powdered sugar or do the icing. I did the icing and grated chocolate on top as it was s a birthday cake.

Notes:

  • For the caramelized sugar syrup, when you put the sugar in the pan, do not disturb the sugar. Let it melt on its own.
  • Second important point is while adding water; make sure that water should not be cold. Because the sugar will be super-hot and if you will pour cold water on it, it can cause burns.

    1. You know what..I have never tried Sooji cake. My grand ma used to make yummy sooji cake in pressure cooker. Do try this cake and tag me if you post the pics.

  1. This looks super tempting, and I actually feel like tucking it right from your post . I am not very good in baking but my daughter loves it, so I am saving this post for future when she could whip this cake for me.

    1. Nice. I am sure, having a piece of warm Christmas cake is a perfect dessert on chilly nights. And when someone is baking for us then nothing can beat the satisfaction.
