We prefer to have light meals during summer. Many of us like to include more salads in our diet. Sometimes, it is one of their meal options. Recently, I tried two salads. You don’t need anything fancy for these salads. Simple ingredients and two yummy summer salads are ready. They are easy, refreshing, colorful, and full of flavors. First salad we will be making is Black Bean-Corn Avocado Salad with a zesty cilantro lime dressing. And the second one is Balsamic Green Beans Salad.

Black Bean-Corn Avocado Salad

Black Bean-Corn Avocado Salad

Ingredients:

1.Black bean – 1 cup (cooked)

2.Corn – ½ cup – (cooked)

3.Tomato – 1

4.Onion – 1/2

5.Cucumber -1

6.Avocado – 1

7.Cilantro – finely chopped

For dressing:

1.Olive oil

2.Lemon juice

3.Minced garlic

4.Black pepper

5.Salt

6.Cumin powder

Method:

1.Cut tomato, onion, cucumber, and in small pieces.

2.Mix black bean, corn, tomato, onion, and cucumber in a salad bowl.

3.Mix the dressing ingredients. Pour it over the black bean and veggies mixture and give it a mix.

4.Add avocado pieces. Give a gentle mix so that the dressing will coat the avocado. Adjust the salt and lemon juice. Don’t over mix; otherwise, it will mash the avocado.

5.Add cilantro.

6.Refrigerate and enjoy!!

Balsamic Green Beans Salad

Balsamic Green Beans Salad

Ingredients:

1.Green beans – cut into 1-1/2 inch pieces

2.Red bell pepper -1, cut lengthwise

3.Onion – ½ – julienne

For dressing:

1.Olive oil

2.Minced garlic

3.Salt

4.Black pepper

5.Lemon juice

6.Balsamic vinegar

Method:

1.Place beans stockpot or a wide vessel; add water to cover. Bring to a boil. Cook, covered, for 8-10 minutes or until crisp-tender. Drain and immediately place in ice water. Drain and pat dry.

2.Take them out into a salad bowl.

3.Add bell pepper and onion to the green beans.

4.Whisk oil, lemon juice, vinegar, salt, minced garlic, and pepper.

5.Pour the dressing over the veggies.

6.Refrigerate and enjoy.

Notes:

1.If you don’t have balsamic vinegar, you can use soya sauce.

It is a perfect side dish for spaghetti. You can add tomatoes and cheese right before serving.
