I am a big fan of Red Pumpkin Puri, also known as Ghaarge or lal bhoplyachi puri in Marathi. Is it made by mixing steamed and mashed red pumpkin with jaggery and adding a pinch of cardamom powder to it, making them like regular puri. And the best part is enjoying it with Ghee. So, whenever I see red pumpkin in my Indian grocery store, I don’t miss it get it. Due to time issues, this time, I decided to make pumpkin barfi. They are quicker than puri. I tried them for the first time, and my Pumpkin Barfi turned out perfect and yummy. So, if you haven’t tried them yet, I insist, please give it a try. Your kids will also like it. They won’t realize that they are eating Kaddu/Pumpkin in a yummy form.
Pumpkin Barfi
For making pumpkin barfi, you will need:
1.Red Pumpkin – 2 cups (grated)
2.Sugar – 2 cups (adjust according to your sweetness level)
3.Milk – 1 cup
4.Ghee – 1 cup
5.Desiccated coconut – 1.5 cups
6.Cardomom powder – ¼ spoon
7.Milk Powder – 1/4 cup
8.Besan (if required)
Method:
1.Grease a plate with ghee and keep it aside.
2.Squeeze the excess water from the grated pumpkin. Heat ghee in a heavy bottom or non-stick pan. Add grated pumpkin. Roast it for a while.
3.Now add sugar, milk, desiccated coconut. Mix it well.
4.Let the entire mixture come together. Keep stirring.
5.If you feel that the mixture is very liquid, add besan to it. Mine was a little liquidy and took a while to get thick, so I added 1/4th cup besan.
6.Mix it well. Let it cook. Keep stirring continuously.
7.Add milk powder. You will see that the mixture will start to leave the sides of the pan.
8.Don’t wait too long. Immediately transfer it to the greased plate. Level it by tapping the plate.
9.Let it solidify. While it is slightly hot, cut it into squares or desired shapes.
10.Wait for the mixture to cool down before taking the pieces out completely.
Note:
You can use Khoya. I didn’t have it, so I used Milk powder.
If you want to make it for Vrat, don’t add Besan, and it will become Vrat Special.
