Diwali is almost around the corner. Festivals means friends meet-ups, get together, potlucks. We all want to have few dishes handy that tastes good without spending hours in the kitchen. How about a yummy, creamy make-ahead dessert? Pineapple pudding is one such option which I prefer making as a dessert whenever I have planned for an elaborated lunch or dinner. The best part of Pineapple Pudding recipe is you can make it in advance. Mix all the ingredients, let it set in the refrigerator for 7-8 hours and your delicious pudding will be ready without standing in the kitchen for hours. Frankly speaking I am not a Pudding person. When we were in Austin, I had this Pineapple Pudding at one of my good friends place. When she asked for a second serving, I couldn’t say no. It’s a very easy pudding recipe. Try it for your upcoming get together. You can either set it in one container or even in individual dessert bowls.
PINEAPPLE PUDDING
Serves : 8 people
Ingredients:
- Island Pineapple Pudding Jello powder
- Condensed Milk – 12 oz can
- Boiling Water – 1 cup
- Heavy Cream – 1/2 Pint or 236 mL (you can find this in the Milk section)
- Pineapple chunks
Method:
- Pour boiling water directly in a container in which you will be setting the pudding. Add Jello powder mix into the water. Mix it well.
- Let the water and jello mixture cool down.
- In a separate bowl, mix condensed milk, heavy cream and pineapple chunks.
- Add this mixture to the jello mixture. Stir it so that everything gets nicely incorporated.
- Cover it and let it set for 4-6 hours in the refrigerator. Serve it chilled.
