Penne in Alfredo

Here is a quick recipe for Penne in Alfredo that we had yesterday night for dinner. Sometimes when I have too many things in my to-do list I don’t mind taking short cuts for cooking…it helps, it really does.  While doing this, I remember Katie Brown said something similar in one of her shows (I don’t recall her exact words..) that don’t feel bad taking short cuts say for example use store bought cake mix for a big party and make it SPECIAL by adding your personal touch.

Taking something store bought/ready made and turning it into something special..sounds good..right… It works not only for parties but also on busy week days…This not only saves your time that can be used in doing some other important work but also gives you a chance to spend some extra time with your family.

This time I got Tri color Penne Pasta. I asked my daughter which sauce she would like to have for her Pasta. Kids always feels pride in making decisions..isn’t? She said..White sauce. I wished for Red sauce as I had all the stuff ready in my refrigerator..but..:) never mind. Since I knew that its not possible to make a homemade sauce so I grabbed the Alfredo sauce bottle. After a tiring but still productive day enjoying warm pasta with family is like heaven…

  •  Tri color Penne Pasta
  • Alfredo Sauce

 Veggies:

  • 1/2 Tomato- cut in squares or use cherry tomato (cut them in half)
  • 1/2 Medium.size Onion-Cut in half moons
  • 1/2 Green Bell pepper- Cut in strips or squares (I cut them in pasta length)
  • 6-7 Baby Carrots- Cut in squares
  • 7-8 Broccoli florets
  • 1/2 cup Green peas
  • Spinach-4 cubes (I used frozen)
  • 2 cloves of Garlic- minced

Seasoning:

  • Palmful of Italian seasoning
  • Black Pepper
  • Salt- if needed

 

Method:

  •  Boil Pasta as per box directions. Reserve pasta water. Keep it aside.
  • Heat the pan, add Olive oil. To that add minced garlic and onion. Saute it for a minute. To it add all the veggies (except tomato) and saute them on medium heat.
  • Add Italian seasoning and black pepper.
  • Add Alfredo sauce. Now add tomato. Adding tomato in the end helps in maintaining its texture. They do not get mushy.
  • If required add reserved pasta water. Check the salt.
  • Drop in boiled pasta. Serve it with garlic bread and salad.
