Kulfi – frozen Indian dessert

 Summer and Kulfi always go together. Here is a fuss free, easy to make Kulfi – frozen Indian dessert recipe.  I made Kesar-Pista Kulfi few days ago. Alike the traditional method, for making this Kulfi, you do not have to stand in the kitchen for hours to reduce the milk. Only 3 ingredients and your Kulfi is ready. Stainless steel molds work great for this.

Kulfi is a popular frozen dessert in India. Traditionally in India, kulfi is sold by vendors called kulfiwalas, who keep the kulfi frozen by placing the molds inside a large pot called a matka filled with ice and salt. It is served on a leaf (dona/pattal) or frozen onto a stick. It can be garnished with pistachios, cardamom. I remember, in Kanpur (my hometown) there is a shop called Badanam Kulfi. As a kid, during our shopping trip we used to save some appetite to have this kulfi. This shop is one of the oldest shops. They make Kulfi in the same (traditional) way I explained above.

Kulfi comes in different flavors namely, Mango, Pistachio, Rose, Saffron (Kesar), Malai (Cream). Kulfi was traditionally prepared following a quite lengthy process by evaporating sweetened and flavored milk via slow cooking, with almost continuous stirring to keep milk from sticking to the bottom of the vessel until its volume get reduced to almost half. It is garnished with ground cardamom, saffron, or pistachio nuts. I made this Kufi  for an International Food Fair. Everyone loved it. I made about 40-50 pieces and my cooler was empty with first 1/2 hour.

You will need:

  • 1 Can Condensed Milk – 14 oz
  • 1 Can Evaporated Milk – 12 oz
  • 1 box Cool Whip – 8 oz
  • Pistachio & Cardamom – chopped or crushed, I prefer crushed. (Save some Pistachio shaves for garnishing)
  • Saffron – few strands

 

Let’s start making this creamy dessert:

  • Blend Condensed milk, Evaporated milk. Fold in Cool whip. Add the nuts. Add Saffron.
  • Fill the Kulfi molds with the mixture. Keep it in the freezer. De-mold by inserting a wooden skewer, stick or a fork, in the center of the Kulfi and pulling it out.
  • If you do not have Kulfi molds, you can use a normal box. I prefer using plastic box as it is easy to scoop out.
