Let me confess. I am not a sooji laddoo fan, and I never tried making them. I like besan laddoo more. Recently, my daughter has developed a taste for sooji laddoo. I gave it a try. And it was a big hit at my place. These laddoos were ready in no time. The best part was they do not need any sugar syrup.
You will need:
(Makes 14 medium size laddoos)
-Sooji: 1 cup
-Dessicated coconut: 2-3 teaspoons
-Clarified butter(ghee) : ¼ cup
-Cream (malai): ¼ cup
-Sugar: 1 cup
-Cardamom powder: ½ teaspoon
-Dry fruits: 1/2 cup (almonds, cashews, raisins)
Let’s make these easy sooji laddoos:
– Heat the pan on medium flame.
-Add ghee and sooji. You can use fine sooji. As you stir the mixture, look out for an aroma. Don’t let it get brown. We just need a slight brown color. Over roasting will change the flavor of sooji
-After 5 minutes, add coconut. And roast along with sooji. -Keep the flame medium.
-Add dry fruits except raisins—roast with sooji and coconut.
-Turn off the flame.
-Now add fresh cream. If you don’t have cream, you can use milk..
-Add sugar and cardamom powder. If the sooji mixture looks dry, add one teaspoon milk or cream.
-The consistency should be such that you can roll the laddoos. It should not fall apart.
-Cover it with a lid for 5 minutes. Let the mixture cool down. Add raisins if you like. Make sure that the mixture is not completely cold. It should be at a temperature where you can handle it.
-Take a small portion and roll them into balls.
– If the mixture is geting dry as you roll it, add some milk.
-You can store these laddoos or one week outside the fridge in an airtight container.
