October to December, I love this time of the year where festivity is in the air, we get to hear Christmas carols, Santa songs everywhere. No festival is complete without having a good time with friends and family which cals for get togethers. Last Christmas I made Tutti-Frutti Cake. Usually, Christmas cake is made by soaking the tutti-frutti (candied fruit) & nuts in rum or brandy. Last year I baked christmas cake for the first time and it was a alcohol-free version. Tutti Frutti is one of those things that’s so very Indian and I relate a lot to Christmas.
I got few requests from my readers for an eggless version of tutti-frutti cake. So, I gave it a try and it came out good.
On Mother’s Gurukul, I have already shared a recipe for Eggless Orange Cake. So, for Eggless Tutti-Frutti Cake, I took that cake’s recipe as base but instead of adding orange juice to the cake, I soaked the nuts & tutti-frutti into orange juice and kept it in the fridge overnight. Result was soft & moist eggless tutti-frutti cake.
So, for those who want an alcohol-free and egg less tutti-frutti cake, here is the recipe.
You will need:
- Plain flour- 1 1/4 cups
- Condensed milk- 1 cup minus 2 tablespoons
- Butter or Oil (I used Butter)- 1/2 cup
- Orange juice- 1/2 cup (for soaking tutti-frutti & nuts)
- Powdered sugar- 3 tablespoons
- Baking powder- 1 teaspoon
- Baking soda- 1/2 teaspoon
- Vanilla essence- 1 teaspoon
- Cloves – 3 (powder it)
- Cardamom – 3 (powder it)
- Cinnamon powder – 2 teaspoon
- Mixed nuts – 1 cup (chopped)
- Tutti-frutti (candied fruit)– ½ cup
Method:
- Pre-heat the oven to 350 deg. F. Sieve flour, baking powder, baking soda.
- Mix well the condensed milk, softened butter, sugar, vanilla essence.spices, tutti-frutti, nuts along with orange juice.
- Take the sieved flour and in a bowl, pour the mixed liquid and mix well. Add spices, tutti-frutti, nuts along with orange juice. Mix well using a whisk.
- Grease a baking pan,with butter and dust with some flour. Pour the prepared batter in the pan. Tap the pan gently once or twice to remove any big air bubbles.
- Bake it to 45 minutes or until the toothpick inserted comes out clean. (the original recipe calls for 30 minutes but it took me 45 minutes). Keep an eye as oven vary.
- Let it cool down for 5 minutes and then invert the cake over a wire rack and let it cool.
