On the occasion of the new website look, let’s begin with some dessert. This is a straightforward cupcake recipe that you can have for a last-minute party dessert. And if you are like me, who likes a moderate amount of sweet in desserts, you will surely love this recipe. Only one bowl required, easy ingredients, phenomenal results; try these perfect chocolate cupcakes out and I guarantee you will love them.
You will need:
- All-purpose flour – 1 cup
- Unsweetened cocoa powder – ½ cup
- Baking powder – 1-1/2 teaspoon
- Salt – ½ teaspoon
- Sugar – ¾ cup
- Milk – ¼ cup+2 teaspoons
- Eggs – 2
- Vegetable Oil – ½ cup
- Vanilla essence – 1 teaspoon
Method:
- Preheat the oven to 350 degrees F and prepare a cupcake pan with liners.
- First dry ingredients: Flour, cocoa powder, baking powder, and salt – whisk together and set aside.
- Add the wet ingredients – sugar, oil, and eggs to the flour mixture. Mix it.
- Add milk and vanilla essence.
- Line the cupcake tray with liners and fill it with the batter about halfway.
- Give a gentle tap to pop the bubbles.
- Bake them for 30-35 minutes.
- Do the toothpick/knife test by inserting it in the center of the cupcake. If it comes out clean, that means cupcakes are ready.
- Remove the cupcake from oven and allow to cool for 2 minutes. Then transfer them to a cooling rack to finish cooling. It will take approximately 10 minutes.
- You can sprinkle some powdered sugar on top. For powdered sugar, the ratio is 1 cup sugar:1 tablespoon corn starch.
- If you are making it for a birthday party, do some icing and decorate it with embellishments. I
- I kept it simple in on the icing part as my family do not like too much icing. But if you are into icing then decorate it with buttercream icing.
For buttercream icing:
- 1 cup salted butter softened to room temperature, 2 sticks
- 4 cups powdered sugar
- 1/2 cup cocoa powder
- 1 teaspoon vanilla extract
- 3-5 tablespoons milk
Process:
- In electric mixer cream butter
- Add sugar, one cup at a time until completely combined
- Stir in cocoa powder and then vanilla extract. Pause to scrape down the sides of the bowl with a spatula.
- Add milk, 1 teaspoon at a time and beating on medium-high speed after each addition for about 15 seconds until desired icing consistency is reached (the less milk you use, the stiffer the frosting will be).
- Pipe icing on completely cooled cupcakes and add sprinkles (if desired).
