Hope you all had a good Thanksgiving break. With holiday season, we all get busy in socializing with our friends, spending family time with relatives. Lunch, get-together, potlucks, dinner starts coming into picture more frequently. Every time thinking about the menu is quite a challenge. I like to keep the appetizer and dessert towards lighter side if the main course is heavy and has more variety. 7 cup burfi or 7 cup cake or 7 cup fudge is a very easy & tasty popular dessert from Karnataka (southern part of India).
All the ingredients are right in your pantry. If you have dessicated coconut in your pantry then this burfi is a handy dessert option after a hearty and scrumptious meal. I tasted this sweet at one of my friend’s place. Taste wise, 7 Cup burfi is close to Mysore Pak. It is called 7 Cup as 7 cups of ingredients are used to prepare this sweet.The right texture of this sweet is it should hold like a burfi but soft when you take a bite. It can be a perfect festival gift for relative or friends.
You will need:
- Besan/Gram flour/Chickpeas flour – 1 Cup
- Dessicated Coconut – 1 cup
- Milk – 1 Cup
- Ghee/Clarified Butter – 1 Cup
- Sugar – 3 Cups
Total : 7 Cups
Lets start:
- Grease a plate, pan with ghee and keep it aside
- First mix besan and milk together in a bowl. This will help in getting a smooth paste.
- Turn on the heat to medium. Combine all the ingredients including the besan-milk mixture in a heavy bottom pan.
- Now, start stirring continuously. Make sure the besan doesn’t stick to the bottom of the pan.
- After few minutes you will see bubbles coming up. Keep stirring. You mixture will look like this.
- After a while, the mixture will start leaving the sides of the pan. This is the point get ready to turn off the heat. (this will take around 20 minutes)
- Transfer the mixture to the greased plate/pan. While the mixture in warm press it gently. You can use a steel bowl, apply some ghee at the bottom from outside and then use it to press the mixture. or use a plastic sheet/aluminum foil, apply some ghee and then press.
- When it is warm, cut it into squares or any shape with a greased knife, but do not remove the pieces until it is coll down completely.
